Ingredients

🥄 1 1/2 cups Greek yogurt (vegan if desired)

🥄 1/2 cup cream cheese (or soft tofu)

🥄 1/4 tsp salt

🥄 1 1/2 tsp pure vanilla extract

🥄 1/2 tbsp lemon juice

🥄 1/2 cup erythritol (or 2/3 cup sugar substitute)

🥄 1 tbsp cornstarch or arrowroot

🥄 Keto-friendly crust of choice


Instructions

Preheat oven to 350°F (175°C).

Blend all ingredients until smooth.

Pour into prepared crust.

Bake for 50 minutes; it should look slightly underdone.

Cool for 1 hour, then refrigerate uncovered for at least 8 hours to set.
