Description

These delightful bites combine creamy cheesecake, sweet coconut, and fluffy whipped cream!


Ingredients

🧀 Cream cheese (softened)  

🍬 Powdered sugar-free sweetener  

🥥 Coconut flour  

🍋 Lemon juice  

🥛 Heavy whipping cream  

🍫 Sugar-free white chocolate chips  

🥥 Coconut oil  

🥥 Shredded coconut  

🍬 Sugar-free marshmallows  

🍬 Granulated sweetener (optional)  

🌸 Pink food coloring (optional)  


Instructions

1. In a large bowl, cream together cream cheese, powdered sweetener, coconut flour, and lemon juice. Set aside.  

2. In a separate bowl, beat heavy cream until stiff peaks form.  

3. Gently fold the whipped cream into the cream cheese mixture until combined.  

4. Scoop 1-inch balls of the mixture onto a parchment-lined tray. Freeze for 15 minutes.  

5. Melt sugar-free white chocolate chips and coconut oil in intervals. Dip cheesecake balls in the melted chocolate and roll in shredded coconut.  

6. Cut bunny ears from marshmallows and attach to each ball with melted chocolate. Store in the fridge.
