Description

Ingredients

1 cup full-fat cottage cheese

1 tablespoon peanut butter 100%

1 tablespoon swerve

2 tablespoons chocolate chips sugar-free

1 teaspoon coconut oil

1 tablespoon peanuts


Instructions

In a high-powered blender, combine cottage cheese, peanut butter, and sweetener.

Blend until smooth and creamy, scraping down the sides as needed.

In a microwave-safe bowl, combine sugar-free chocolate chips and coconut oil.

2 tablespoons chocolate chips,1 teaspoon coconut oil

Microwave in 30-second intervals, stirring between each, until melted. Alternatively, use a double boiler to melt the chocolate.

Single Layer: Divide the cottage cheese mixture into two bowls. Drizzle with melted chocolate and sprinkle with peanuts.

Layered Mousse: Spoon half of the cottage cheese mixture into a glass. Pour half of the chocolate over it and sprinkle with peanuts. Repeat the layers.

1 tablespoon peanuts

Refrigerate for at least 30 minutes (or 1-2 hours for layered mousse). Serve chilled and enjoy!
