Ingredients
π§ 1 1/2 pounds large shrimp, peeled and deveined
π§ 2 tbsp olive oil
π§ Salt and pepper to taste
π§ 3 tbsp butter
π§ 1/2 onion, chopped
π§ 3 tsp minced garlic
π§ 1 tsp basil
π§ 1 pinch nutmeg
π§ 1 cup heavy whipping cream
π§ 1/2 cup grated parmesan cheese (plus 1/4 cup)
π§ 1 1/2 cups shredded Monterey Jack cheese
π§ 1/4 cup crushed pork rind crumbs
Instructions
Preheat the oven to 375 degrees.
Heat the olive oil in a skillet over medium high heat.
Season the shrimp with salt and pepper to taste, and sear the shrimp until just cooked through.
In a saucepan, melt the butter over medium heat.
Stir in the onions, and saute until they have softened.
Mix in the garlic, basil and nutmeg. Saute for 30 seconds.
Pour in the heavy whipping cream, and simmer until thickened.
Stir in Β½ cup of parmesan cheese and Monterey Jack cheese.
Season with salt and pepper to taste.
Pour the sauce over the shrimp, and layer into a well greased baking dish.
Combine the remaining parmesan and pork rind crumbs in a bowl.
Sprinkle the mixture over the shrimp.
Bake for 25 minutes.
