Ingredients
🥦 14 ounces (400g) Cauliflower florets, cut into bite-size pieces
🍕 2.5 ounces (70g) Pepperoni
🍖 2 pounds (900g) Italian Sausage, casing removed
🫒 1 tablespoon Olive Oil
🍄 8 ounces (225g) Mushrooms, sliced
🌶️ 1 Green Pepper, cut into bite-size pieces
🧀 12 ounces (340g) Mozzarella cheese, shredded
🍅 1.5 cups (360ml) Low Carb Pasta Sauce, like Rao’s Homemade Marinara
🧂 1/4 cup (25g) Parmesan cheese, powdered
🌿 1 teaspoon Italian Seasoning
Instructions
1. Steam cauliflower in a bowl with water for 3 minutes.
2. Drain and pat dry; set aside.
3. Preheat oven to 400°F (200°C).
4. Cook Italian sausage in a skillet for 15 minutes; drain fat.
5. Sauté mushrooms in olive oil for 10 minutes; set aside.
6. In a casserole dish, spread ½ cup pasta sauce.
7. Mix cauliflower, sausage, mushrooms, and green peppers; layer half in the dish.
8. Top with ½ cup sauce, half pepperoni, and 6 ounces mozzarella.
9. Repeat layers and sprinkle with Parmesan and remaining pepperoni.
10. Bake for 30 minutes until cheese is melted.
